1. Prepare an 8 inch tin.
2. For the base: crush the biscuits and maltesers until they are like fine breadcrumbs.
3. Mix the melted butter into the crumb mix
4. Pour the crumb mix into the cake tin, level and compact it. Place in a fridge to set fully.
5. For the topping: Beat together the icing sugar, cream cheese, soured cream and vanilla.
6. Whisk the double cream until it forms medium peaks and then add to the cream cheese mix. Add the crushed maltesers and fold to combine.
7. Pour the cheese mix over the chilled base ensuring it islevel. Banging the tin a couple of times on the work surface should ensure the mix has made it into all spaces.
8. Allow to set in the fridge for 2 hours. Once ready to serve, remove from the fridge and press the maltesers in to the topping if using. Cut and serve.
