Chocolate Boiled Fruit Cake

INGREDIENTS

  • 3 cups mixed cranberries and apricots (or any other dried fruit
  • 1 cup sugar
  • 125gms Margarine
  • 1 teaspoon bi-carb
  • 1 teaspoon mixed spice
  • 2 tbspns cocoa powder
  • 1.5 cups cold water
  • 0.5 cup brandy
  • 2 well beaten eggs
  • 2 cups flour
  • heaped teaspoon baking powder

METHOD

1. Boil together mixed fruit, sugar, Margarine, bi-carbonate, mixed spice and water gently for 25 minutes:

2. Remove from stove and allow to cool

3. Add brandy, eggs, flour, cocoa and baking powder, mix well and bake at 160C for 1.5 hour
